This isn't my normal post full of cute pics. but I warned I may do this, so here goes :)
For the last month or so I've been complaining we're in a rut when it comes to A's meals. For Mother's Day my Mom have me a cookbook I picked out from Amazon. The book is called SOS! The Six o'Clock Scramble to the rescue. We have used this book every night this week and it has been awesome.
First, I love that it is separated into sections by season. I always want to cook by season but this book makes it easy. Obviously we're working through spring :)
Second, the meals really are quick, while also being healthy and delicious for all ages. This week we've made an orzo-pea-feta dish, a sesame honey noodle dish, and ginger salmon. Tonight lemon oregano chicken and zucchini fritters with couscous is on tap. I used to love Rachel Ray recipes, but sadly they are not always healthy nor do they take 30 minutes (it's always longer...) Don't get me wrong - I still have some great standbys from RR, but this is my new go to book for dinner.
I didn't take pictures of the food this week, but maybe tonight :) A loved the orzo pasta, and thought the sesame honey noodle dish was okay. What will he think of the zucchini fritters?
Follow up...fritters are ok...we'll try again :)
